Southwest Chopped Salad w/ Avocado Dressing

Ingredients
Dressing
  • 1 ripe avocado, peeled and seeded
  • ¼ c silken tofu
  • ¼ c scallions, chopped
  • ½ c fresh cilantro leaves
  • 1 garlic clove
  • 2 T lime juice
  • ½ t agave nectar
  • ¼ t ground cumin
  • ¼ t cayenne
  • ½ c water
  • ¼ t salt
Salad
  • 2 c romaine lettuce, chopped
  • 1 c chopped tomatoes
  • 1 15-oz can pinto beans, rinsed and drained
  • 1 15-oz can corn, rinsed and drained
  • ¼ c red onion, finely diced
  • 1½ c tortilla chips, crushed
  • 1 c pumpkin seeds, toasted
Instructions
  1. In a blender or food processor, combine avocado, tofu, scallions, cilantro, garlic, lime juice, agave nectar, cumin, cayenne, water and salt. Blend until smooth. If dressing is too thick, add a bit more water until it’s a pourable dressing consistency.
  2. In a large bowl, toss, lettuce, tomatoes, pinto beans, corn, red onion, tortilla chips and pumpkin seeds. When serving, drizzle each with dressing.
